Step 1

What your lovely self will need: 1 pack of beef chunks for stew, 2 large beets, 1/2 large cabbage ( red cabbage gives a nice kick to the color, but green is fine too :) 3 potatoes, 2 large carrots, 1/2 onion, 2 garlic cloves,salt, vinegar , 1 can of tomato paste, 2 bay leafs, 1 can of beans, black pepper

Step 2

Throw the meat in the boiling water, add salt, boil on high for 15 min, then put the fire on low and boil for 45 min,until it's tender :) Take out the meat, cut into smaller pieces and throw back into the pot.

Add chopped cabbage. Like i mentioned, purple cabbage gives the soup even nicer color :)

Chop the beets and throw on the frying pan, add 2 tbs of vinegar ( it'll help to save the color) add the tomato paste and simmer for 5 min,if it's too thick, add a bit of water :) add to the soup

Simmer carrots with onions ( i always chop onions into tiny pieces or use blender) Add to the soup, then add chopped potatoes, minced garlic, more salt if needed, bay leafs and black pepper. Boil it all on medium, untill the potatoes are ready

And Voila! Serve with minced herbs(parsley and dill) and 1tbs of sour cream (must!!!) Don't forget to mix it all together Enjoy!
